Gorgeous + Healthy Farro Bowl for You and the Kiddos

I just realized that I haven’t posted a recipe in a little while, and after making this recently, I knew that it was SOO good that I needed to share it! My favorites recipes are one’s that not only taste delicious, but have healthy ingredients, and MAJOR points if the kiddos love it too! This is one of those dishes! It truly is so simple to make, and absolutely delicious.

The farro bowl recipe that I am going to share with you is from HelloFresh! Over the last three years that I have been getting their boxes, I have tried so many new foods and recipes, and I like to think that it has made me a pretty darn good chef! I know you guys see me post myself cooking on my stories often, and I love it!! I honestly give credit for a lot of my cooking abilities to HelloFresh! It has taught me to try new techniques (with easy to follow instructions) and over time, I really have become a home chef instead of just a professional pasta boiler. Ha! Time to for the recipe!! I hadn’t been cooking with farro all that often, but after making this dish, I can’t wait to make it more. Molly and Riley both loved it!!! The farro is packed with fiber (helps to make everyone more regular, Ha!) and I also chop up tiny pieces of the veggies to mix with the kiddos farro as well!

Ingredients

¾ cup farro

2 packets of veggie stock concentrate

6 ounces of asparagus

1 yellow onion

1 zucchini

2 cloves of garlic

1 lemon

¼ cup of parmesan cheese

1 ounce walnuts

1 tablespoon olive oil

1 tablespoon of butter

salt and pepper to taste

You will also need a medium stock pot, a zester, a large pan, and a strainer.

How to Make The Gorgeous Greens Farro Bowl

I have added a few “kid friendly modifications” in the instructions, if yours are young like mine!

Step 1. Preheat oven to 450 degrees. Combine farro, stock concentrates, and 3½ cups water in a medium pot. Bring to a boil and cook until farro is tender, 30-35 minutes total. TIP: If water evaporates before farro is cooked, add a splash more.

Step 2. Wash and dry all produce. Trim and discard bottom woody ends of asparagus. Cut off fuzzy tips and set aside. Chop stalks into ½-inch pieces. Slice zucchini into thin rounds. Mince or grate garlic. Halve, peel, and finely dice onion. Zest, then halve lemon. **Kid Friendly Modification: During step 2, I also finely chop up a small amount of the zucchini, asparagus and onion to add to theirs, but continue the rest of the process the same.

Step 3. Toss asparagus tips, zucchini, and a large drizzle of olive oil on a baking sheet. Season generously with salt and pepper. Roast in oven until nicely browned, 15-20 minutes, tossing halfway through. **Kid Friendly Modification: Include the super small kiddo pieces of zucchini and asparagus on the baking sheet, but make sure to check it after about 5 minutes and remove if they are fully cooked.

Step 4. Meanwhile, heat a drizzle of olive oil in a large pan over medium-high heat. Add onion and cook, tossing frequently, until soft and translucent, 3-4 minutes. Add garlic and cook, tossing, until fragrant, another minute.

Step 5. Stir asparagus stalk pieces into pot with farro about 5 minutes before farro is done (grains should be just shy of al dente). Drain once both are tender, then add to pan with onion and garlic. Stir in juice of one lemon half, half the lemon zest, half the Parmesan, and 1 TBSP butter. Season with salt and pepper. **Kid Friendly Modification: Before stirring veggies into farro, separate a small amount of the farro for the kids into a bowl, and add their veggies and a little bit of the onion and parmesan!

Step 6. Divide farro mixture between bowls. Top with zucchini and asparagus tips. Sprinkle with remaining lemon zest, walnuts, and remaining Parmesan. Cut any remaining lemon into wedges and serve on the side.

  2. I did not know you didnt eat meat, but I kind of gathered. I dont eat red meat but I love chicken and fish (I have to have my protein, helps with my weight also) and they have some awesome chicken recipes also. I have tried this farro bowl and a couple of their other veggie dishes and they really are delicious. I try to get one chicken recipe and one veggie recipe per week. Thanks to you 80.00 off last time I got 4 weeks worth of meals. I stopped it when the discount ended but hoping I qualify again this time, because 80.00 of is a really good deal.

    1. The funny thing is that ever since I stopped eating eat I haven’t dieted AT ALL and I am smaller than I was when I used to eat meat (with exception of 5 pregnancy pounds I’m holding onto). I used to diet all the time but cutting out meat was the key for me!
