Sweet Potato Fajitas – Ingredients to Feed Yourself and Your Kiddos

You guys have probably noticed from the recipes I write about that I absolutely love to cook with sweet potato! I just think it’s one of the most perfect foods to cook with when you have young kiddos. First, Molly absolutely loves it! She not only loves it cooked but she even loves to eat it raw! I didn’t even know that was a thing! One day when I was cooking these fajitas she asked to eat a piece of the sweet potato raw and I reluctantly gave it to her knowing that she wasn’t going to like it. Or I guess I should say thinking that she wasn’t going to like it. But to my surprise, she gobbled it up and wanted more! So bizarre right?! But I will say she likes it even more when I cook it.

Also, Riley is starting to eat solid foods. Well solids that I either steam really well or purée. The very first whole food we gave him was a steamed piece of sweet potato. Parents often ask me how I transitioned Molly, and now Riley, over to solid foods and the answer is that I transitioned both with sweet potato by steaming it as soft as I can possibly get it. It basically melts in their mouth and very little chewing is involved… at first. And then little by little I’ll start steaming it less so it becomes a little bit more firm each time as they gradually learn to chew. Anyway, the reason I’m talking about this is because I’m sharing another sweet potato recipe on my blog today! And I just think making sweet potato is a great way for parents to make a healthy meal for their kiddos and avoid having to make separate meals for everybody.

So today I’m sharing this sweet potato fajita recipe that I got from HelloFresh! You guys know I work with HelloFresh and I have been getting their boxes for about three years now! We just love it so much! And I honestly feel like I’ve become a really good cook. I couldn’t cook anything other than pasta before I started getting HelloFresh. But little by little I’m learning tips and tricks, and I just love their recipes so I’ll re-create them again and again! Now let’s talk about the sweet potato fajitas! They are super easy to make and really yummy! Plus I can give Molly the baked sweet potato (she also eats the tortilla, tomato and cheese for a little wrap of her own) and steam a few pieces for Riley! So it’s easy to feed everyone! Here are the ingredients you’ll need to make it…

Ingredients

2 sweet potatoes

1 red onion

1 Roma tomato

1/4 ounce cilantro

2 tablespoons sour cream

1 cup of pepper jack cheese

1 teaspoon southwest spice blend

1 long green pepper

1 lime

1 jalapeño

6 flour tortillas

5 teaspoons vegetable oil

1/2 teaspoon sugar

Salt and pepper

How to Make it

1. Wash and dry all produce. Place rack in upper third of oven and preheat to 425 degrees. Cut sweet potatoes into ½-inch-thick wedges. I will save a couple pieces to steam for Riley. They I’ll toss the rest on a baking sheet with 1 TBSP oil and Southwest spice. Season with salt and pepper. Roast in oven until tender and lightly crisped, 25-30 minutes. Molly likes the spice but if your kiddo won’t then separate a few pieces to the side of the baking sheet and only season with salt and pepper.

2. Meanwhile, halve, peel, and thinly slice onion. Dice a few slices until you have ¼ cup diced onion. Core, seed and thinly slice green pepper. Core, seed, and chop tomato. Zest ½ tsp zest from lime, then cut into quarters. Roughly chop cilantro. Thinly slice jalapeño, removing ribs and seeds if you prefer less heat.

3. Place jalapeño, ½ tsp sugar, and a big pinch of salt in a small bowl. Squeeze in juice from two lime quarters. Toss to coat and set aside to marinate.

4. Heat a large drizzle of oil in a large pan over medium-high heat. Add sliced onion and green pepper. Cook, tossing occasionally, until softened and lightly charred, 8-10 minutes. Season with salt and pepper. Remove pan from heat.

5. While veggies cook, toss together tomato, diced onion, cilantro, and a squeeze of lime juice in a small bowl. Season with salt and pepper. In another small bowl, stir together sour cream, lime zest, and a squeeze of lime juice. Season with salt and pepper.

6. Wrap tortillas in a damp paper towel. Warm in microwave until soft, about 30 seconds. Divide tortillas between plates and fill with sweet potatoes, veggies, cheese, salsa, crema, and as much jalapeño as you like.

  2. My son is 8.5 months and i have been slowly transitioning him to solid foods and sweet potato was key for us as well!!!!! He had a very rough time with new textures but is getting better little by little. Are there other foods you recommend to help with the transition!?! Thanks for all of your awesome mom posts!!! As a new mom I love reading other moms advice/tips/tricks!! I am really struggling with the whole sleep train thing but know I need to bite the bullet and do it!

      When we are sick, we are sick, nothing we can do about it! Also, when you have a husband/partner/relatives with you, either they are sick or you are the one who is sick, it is always a privilege to take care of them/or someone takes care of you.

      Sorry, I have to react because I am the person who when I am sick, I still want to go to work, serve my husband, feed our 3 kitties, clean the house, do the laundry, etc.. But then again, people who love me tell me to stop — about time to be pampered and spoiled.

  5. We love sweet potatoes! I eat them raw- peeled and cut in chunks- the dogs looove them too! They come over and wait for a piece. And they are great grated on salads- just subtly sweet and yum!

  6. Wow, this literally came at the perfect time for me. My daughter just turned 10 months old yesterday, and I am currently stressing about making the switch from purées! She seems to hate texture and just keeps spitting stuff out (except tonight we made some progress with soft pieces of peaches!). She’s had some peas and carrots mixed in with the purées and some slighty mushed banana, but I think she was mainly swallowing them. Definitely going to give steamed sweet potatoes a try! That was her first puréed food we made and she’s loved the taste from the start – great idea, thank you!! :):)
