Strawberry Avocado Toast

The fam and I went to the farmers market yesterday and got fresh avocado and strawberries so I thought it was the perfect opportunity to make one of my favorite avocado toasts! And since it’s so simple to make, I thought I would throw the ingredients up on my blog so you guys can make it too. It looks really fancy but it’s ridiculously easy to make. I love to make it when guests spend the night because it feels like a really nice breakfast for them in the morning even though it’s basically easier than making bacon and eggs.

I also sometimes make a gluten-free version when my gluten-free friends come over. Which I’ll show you in a minute.

Here’s all you need to make it.

Ingredients

Wheat bread for toast
Goat cheese
Avocado
Strawberries
Balsamic glaze

Once you get the ingredients it’s really just layering.

I start with the goat cheese layer with thin slices of avocado on top followed by thin slices of strawberry.

You can make your own balsamic glaze by reducing balsamic vinegar and adding some sugar. But I actually just buy a pre-made at the store because it makes it really easy for me to make this in the morning. The jar of balsamic glaze is just in my fridge and I can squeeze some on rather than doing a reduction every time. I’m pretty sure you could find something similar at your grocery store. We got this at our local grocery store.

If you don’t want to make a reduction and can’t find the balsamic glaze at your grocery store, you could also use honey and that would be really tasty.

The picture below shows you my gluten-free version, which in my opinion looks like a little piece of artwork on a plate! You could use gluten-free bread but I think it’s fine to just ditch the bread altogether and instead use half of the avocado as your vessel for the other ingredients. I just put a scoop of goat cheese in the center and layer on some strawberries. I’ll add strawberries to the plate as well so there is enough for every bite of avocado. And then of course drizzle with the balsamic glaze.

And that’s really it. It’s pretty much the easiest thing ever to make and it’s absolutely delicious! When I start my morning with something like this I feel like I just start my whole day off on the right foot. And it sure beats coffee and a doughnut. Ha!   2. Hi Ali, I just made myself the same thing except I used mashed avacado with a fried egg on top. Delicious and never thought of using strawberries or a glaze. Will definitely try it. Do you have a special wheat bread you like to use? Not a huge bread fan but if I find a really tasty lo cal one I will definitely eat it. Thanks for the recipe.   10. I finally got around to make this for breakfast today and was a bit skeptical at first. Goat cheese and avocado are not usually a part of my grocery routine. I bought the glaze and all the ingredients to give it a go. Wow oh wow! This was delicious!!!!!!
